It's Gonna Be a Long One!!!

We went to Ruidoso last weekend. We had a family reunion in Browinfield on Saturday, and then me and the two boys headed to my mom's. She had a horse racing in a big futurity race on Sunday and really wanted us to be there. Chance decided to come up on Sunday. We enjoyed the races with lots of friends and family and then topped the day off with my mom's horse winning!! Whoo Hoo!!! It was sooooo exciting. There were twenty something of us all there watching, jumping, and screaming~ it scared poor Casen but we were all screaming so loud I couldn't hear the poor guy crying!!! It was our first time there to get to go to the winner's circle with one of my mom's horse for pictures! (I will post them when I get my copy).
We are still working on sprucing up our house and are getting close to me being able to post some before and after pictures, we just aren't quite done enough for me to show it off!!!
We have been so busy trying to stay busy, if you know what I mean!!! We have a long summer of no PDO leaving me to keep the boys entertained. We have been enjoying our weekly outings, I have enjoyed haveing some adult conversation, Rayden has enjoyed having someone to play with, and Casen has enjoyed, well, all of it I guess!!! We have done the park a couple of times, the Science Spectrum, and then fed the ducks and played today.

Casen is 11 months old now and is into EVERYTHING!!! He is running all over the place and is into climbing on everything and over everything. He loves to get in chairs, stand up, and then he just belts out laughing!!!



Rayden is getting closer to turning 4 and asks nearly everyday if it is his birthday yet! He is enjoying summer, and the fact that our neighbors have a swimming pool!! He loves the water and would swim all day, every day if he could!!!

Camping!!!

Rayden has been asking to go camping lately. We have been so busy that getting out of town hasn't even been a possibility, so Saturday Chance set the tent up in the back yard, built a "camp fire" and the two of them went camping!!!

Some Healthy Recipes

Here are a couple of healthy recipes that I can share with you. I will put the weight watchers points in case there are any of you following that program.

Breaded Ranch Chicken
3/4 c corn flakes- crushed
3/4 c fat free Parmesan Cheese- grated
1 envelope Ranch style dressing mix
8 chicken breast halves- boneless without skin
1/2 c nonfat margarine- melted

Combine corn flakes, cheese & ranch mix. Dip chicken in butter and roll in corn flake mix to coat. Place in 13X9X2 pan. Bake uncovered at 350 for 45 minutes (or until done).

8 servings- 4 points per serving


Creamy Coleslaw
1/2 c fat free mayo
2 T white vinegar
1/2 t sugar
1 t celery seed
1 pkg coleslaw
3 onions chopped
1/2 cucumber (peeled & chopped)

Combine first four ingredients in small bowl. Toss with coleslaw, onion, and cucumber in large bowl.

8 servings- FREE

Hashbrown Casserole
1 c Onion
1 c Reduced fat cheddar cheese
2 T margarine
1 carton fat free sour cream
1 can reduced fat cream mushroom soup
32 oz Southern Style Hashbrowns (in the frozen section at the store)
Pepper

Combine all ingredients and spread in a 9X13 baking dish (sprayed with Pam). Sprinkle with Paprika. Bake at 350 for 1 hour.
